Blueberry Pancakes

This easy, subtlety sweet yet hearty breakfast is quick to create and delicious to savor whether it’s just you or a whole crew of people.

The recipe is quite simple and easy to do in the fly if you cook regularly and therefor have he following ingredients:

(For 3-5 people)

1 ½ Cups of All Purpose Flour
3 ½ Teaspoons of Baking POWDER
1 Teaspoon of Salt
1 Tablespoon of Sugar
1 Egg
1 ½ Tablespoons of Vegetable Oil
1 Cup of Water

Pancakes Ingredients

These following ingredients are optional but truly make all the difference. They are my “secret sauce” if you will…

1 ½ Teaspoons of Vanilla Extract
1 Teaspoon on Cinnamon (I tend to add a bit more)
A Dash of Nutmeg
Blueberries! (Or Chocolate Chips, Bananas, etc.)

You can also add a Dash of Ground Allspice!

Add all the dry ingredients first (this means everything but the oil, egg, vanilla, water) ,mix that together, then add the wet ingredients and stir together until not lumpy. If it seems too think, add in a LITTLE more water until you get a smooth consistency, but not soupy and too loose! Fold in the blueberries (or chocolate or bananas, etc.)

Cooking Pancakes

Heat griddle to 350-375 degrees and either spray with a butter-based cooking spray or use a stick of butter. With a large spoon or ladle, scoop out the mixture onto the hot griddle. Flip when cakes starts to rise and/or bubble.

– I like to flip the pancakes twice on each side so they are a little more firm or crispy… Just a personal preference!

Warm up your favorite syrup and enjoy!
